Back at home, meals like fried plantains — a sickly-sweet dish of deep fried plantains that is typically served with scrambled eggs — were common, especially for lunch or dinner. There was obviously a fair mix of more Western options in our daily food choices, but cultural food was never set aside because there’s nothing more special than partaking in and enjoying one’s cultural heritage.

Enjoy Your Chow
“As-salamu alaykum!”, a familiar greeting in the Middle East meaning “peace be upon you.” I gave and received this greeting a thousand times while I was overseas with the Marine Corps in 2008. It was just about the only thing I knew how to say. Everything else was a low form of sign language that often made me look like an uneducated ape. Regardless of the language barrier I managed to explore some markets from time to time and came across some interesting foods.

My trip to Puerto Rico changed the way I cooked in my house. I am talking about the Puerto Rican sofrito. I came by this amazing marinade on my trip to Puerto Rico one summer. All over Puerto Rico the food is good and savory. When I came to one street vendor, I just had to ask what their secret was. I was told it was sofrito.

Flavor in Balance
I’m just gonna get right into it. At sixteen, I diagnosed myself with HS (hidradenitis Suppurativa) through Google. My doctor confirmed it at a same day appointment once I finally told my Mother, I was beyond crushed, confused, and trying to figure out what and who to blame. I suffered with severe symptoms for year’s until I discovered an herbal detox through a colleague at 22 and decided to try it, I trusted myself to be disciplined enough to get through and see some positive results. Before that, I looked at HS strictly as a skin disorder but this was before my further research of autoimmune diseases.
