My Mom's Stroganoff. Honorable Mention in A Taste of Home Challenge.
Most people have a favorite comfort food they like to eat. It can be a sweet dessert, chocolate, mashed potatoes, just about anything from Thanksgiving dinner. Some dishes are cultural, something that reminds them of family and home. Others are just for the taste or mouth feel of the food item. I know when my husband is having an off day, he wants macaroni and cheese. A perennial favorite with kids and adults alike. You can never do wrong with the orange-yellow noodle-y goodness.

My Mom's Picadillo
One of the things I hate most about recipes online is the long story that comes before it. The entire history of where the ingredients for a butter cake come from, the author’s entire food-on-the-road blog, or everything that’s happened in the world since it was formed. A lot of advertisements floating around the sides or in between the text. Then follows the general ingredients, and more dialogue. A few photos. THEN you get the recipe measures and directions. If you want the recipe, skip right to the end below. I promise not to tattle on you.

Celebrating… Coconut Cake!
“You'll Always Find Me In The Kitchen At Parties” is an outrageous lie! Whilst I liked the 1980’s quirky song by Jona Lewie — and I love food — I loathe cooking! Parties = People. When push comes to shove, I will always choose fraternising over food. You might find me in the kitchen at some parties, chatting as I roll up my sleeves to splash around in the sink. I’m never alone and definitely not hiding out in the kitchen! Abhorrent thought!

Features of Baba Ghanoush Dish
1. What is Baba Ghanoush? Baba Ghanoush is a traditional Levantine dish that primarily consists of mashed roasted eggplant mixed with tahini, olive oil, and seasonings. The eggplant is typically charred to achieve a distinct smoky flavour, setting it apart from other dips like hummus. It is commonly served as an appetiser or a side dish, often accompanied by pita bread, fresh vegetables, or grilled meats.

The Home-Cooked Flavour of Abuela’s Arroz con Pollo.. Runner-Up in A Taste of Home Challenge.
It’s the smell that always gets to me first. A soothing, comforting wave of saffron, garlic and simmering chicken that transports me immediately back to Abuela Elena’s humming kitchen. It’s the smell of Arroz con Pollo, a meal that for my family means so much more than just chicken and rice. It’s a legacy; a physical connection to our Puerto Rican heart and soul; the foundation for any get-together, holiday or regular day; a ritual.

Creamy Mushroom & Spinach Salmon
I’ve seen this recipe in my Facebook reels multiple times in slightly different variations and wanted to try it for a long time but never had all the ingredients for it. Yesterday, I finally did. So here it is, shared for your pleasure.
